Chili Lime Shrimp Wraps for Light and Fresh Clean Eating  I can’t stop daydreaming about those long summer days when the sun warms your body and spirit. The fragrance of freshly cut grass, BBQs, jumping into pools of water, eating watermelon like it’s my job, light, refreshing evening dinners served on the terrace where people linger late into the night, chatting and laughing…

 

Ingredients:

  1. 1.5 pounds of uncooked, peeled and deveined prawns
  2. 1 teaspoon smoked paprika
  3. 2 teaspoons ground cumin
  4. two fresh garlic cloves, minced
  5. Half a tablespoon each of extra-virgin olive oil or avocado oil, sea salt, and freshly ground black pepper
    freshly ground pepper granules
  6. Two new limes
  7. a few fresh cilantro leaves, chopped; eight to ten butter lettuce or romaine lettuce leaves, cleaned and patted dry
  8. One large avocado, chopped
  9. One red chilli, cut thinly

 

Directions:

  1. Shrimp, all seasonings, lime juice, garlic and one tablespoon of oil should all be combined in a big glass bowl.
  2. Toss to coat, and season with sea salt and pepper, to taste.
  3. Cover and refrigerate for approximately 15 minutes, if you have the time.
  4. In a big skillet, heat the oil over medium heat. Add prawns and cook for 3 to 4 minutes, or until barely pink.
  5. Add cooked prawns, diced avocado, chopped cilantro, sliced chiles, lime juice and the remaining oil to a large bowl.
  6. Stir gently to mix.
  7. If necessary, taste and add a dash of sea salt and pepper for seasoning.
  8. Spoon in heaps of the avocado shrimp mixture onto the lettuce leaves as displayed, and savour.
