4 salmon fillets (about 6 oz each, skin-on or skinless)

3 tbsp olive oil

Juice & zest of 1 lemon

Juice & zest of 1 orange

2 cloves garlic, minced

1 tsp Dijon mustard

1 tbsp fresh dill, chopped (or parsley)

Salt & black pepper, to taste

For the Dill Yogurt Sauce:

1 cup Greek yogurt (plain, whole milk recommended)

1 tbsp olive oil

1 tbsp lemon juice

2 tbsp fresh dill, chopped

1 tsp honey (optional, balances tanginess)

Salt & black pepper, to taste

Optional Garnishes:

Lemon wedges

Extra fresh dill

Drizzle of olive oil

Instructions

Marinate Salmon → In a bowl, whisk olive oil, lemon juice & zest, orange juice & zest, garlic, Dijon, dill, salt, and pepper. Place salmon fillets in a dish, pour marinade over, and refrigerate for 30 minutes.

Prepare Dill Yogurt Sauce → Mix Greek yogurt, olive oil, lemon juice, dill, honey, salt, and pepper. Chill until serving.

Cook Salmon

Oven: Preheat oven to 400°F (200°C). Place salmon on a lined baking sheet and roast 12–15 minutes, until flaky.

Grill/Pan-sear: Cook salmon 3–4 minutes per side, depending on thickness.

Serve → Plate salmon, drizzle with dill yogurt sauce, and garnish with lemon wedges and fresh herbs.
