Ingredients for Classic Slow Cooker Pot Roast :
- 3 lbs chuck roast
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 large carrots, cut into chunks
- 1 lb baby potatoes, halved
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tbsp tomato paste
Instructions for Classic Slow Cooker Pot Roast :
- Season the chuck roast well with salt and pepper, then sear it in olive oil over medium-high heat for three to four minutes on each side, or until browned on both sides.
- Second, move to the slow cooker.
- Add the minced garlic and chopped onion to the slow cooker after they have been cooked for two minutes in the same pan.
- In the slow cooker, arrange the potatoes and carrots around the roast.
- Stir gently to combine the tomato paste, Worcestershire sauce, beef broth, thyme, and rosemary.
- Cook until the roast is soft and shreds easily, 8 to 9 hours on low or 4 to 5 hours on high.
- Present the roast hot with potatoes, carrots, and a little liquid.
- If preferred, garnish with fresh parsley.
