5 medium zucchinis (grated, about 500g)
1 large onion (finely chopped)
3 rashers of bacon (chopped)
1 cup self-raising flour
1 cup grated cheddar cheese
5 large eggs
¼ cup olive oil

Instructions
1. Preheat Oven & Prepare Baking Dish:
Preheat your oven to 180°C (350°F).
Grease and line a 20×30 cm (8×12 inch) baking dish with parchment paper.
2. Prepare Ingredients:
Grate the zucchinis and squeeze out excess moisture using a clean tea towel.
Finely chop the onion and bacon.
3. Mix the Batter:
In a large bowl, whisk the eggs.
