Cranberry Pistachio Energy Bites

Soft, chewy energy bites made with oats, pistachios, and cranberries, lightly sweetened with dates or honey.
They taste festive, look beautiful with red-green colors, and are perfect for diet-conscious holiday snacking.

Ingredients 

1 cup rolled oats

½ cup pistachios, finely chopped

⅓ cup dried cranberries

¼ cup almond butter or peanut butter

3 tbsp honey or maple syrup

1 tsp vanilla extract

Pinch of salt

Optional: 1 tbsp chia seeds or ground flaxseed

Instructions

1. Mix

In a bowl, combine oats, pistachios, cranberries, chia/flax (if using), and salt.

2. Bind

Add nut butter, honey/maple syrup, and vanilla.

Mix until sticky and well combined.

3. Shape

Scoop tablespoon portions and roll into balls.

4. Chill

Refrigerate 20 minutes to firm up.

5. Serve

Store chilled or at room temperature for short periods.

Tips & Variations

Add orange zest for a Christmas flavor boost.

Roll in crushed pistachios or coconut for coating.

Use date paste for refined-sugar-free version.
