Cranberry Pistachio Energy Bites

Ingredients
1 cup rolled oats
½ cup pistachios, finely chopped
⅓ cup dried cranberries
¼ cup almond butter or peanut butter
3 tbsp honey or maple syrup
1 tsp vanilla extract
Pinch of salt
Optional: 1 tbsp chia seeds or ground flaxseed
Instructions
1. Mix
In a bowl, combine oats, pistachios, cranberries, chia/flax (if using), and salt.
2. Bind
Add nut butter, honey/maple syrup, and vanilla.
Mix until sticky and well combined.
3. Shape
Scoop tablespoon portions and roll into balls.
4. Chill
Refrigerate 20 minutes to firm up.
5. Serve
Store chilled or at room temperature for short periods.
