Instructions
1. Make the Creamed Spinach
Heat olive oil in a pan over medium heat. Sauté garlic for 30 seconds. Add spinach and cook until wilted. Stir in Greek yogurt, cream cheese, Parmesan, salt, and pepper. Cook until creamy. Remove from heat.
2. Prepare the Salmon
Cut a deep pocket into each salmon fillet. Season with salt, pepper, and oregano. Stuff generously with the creamed spinach mixture.
3. Cook the Salmon
Heat olive oil in an oven-safe skillet over medium heat. Sear salmon for 3–4 minutes per side.
