Creamy Asparagus Pasta Recipe
Ready in 25–30 minutes
Serves 2–4
Ingredients
8 oz pasta (penne, fettuccine, or your favorite)
1 bunch asparagus, trimmed and cut into 1- to 2-inch pieces
2 tbsp olive oil or
3 cloves garlic, minced
½ tsp red pepper flakes (optional)
¾ cup heavy cream (or half-and-half for lighter version)
½ cup grated Parmesan cheese (plus more for serving)
½ cup reserved pasta water (as needed)
Salt & black pepper, to taste
Lemon zest or juice (optional, for brightness)
Fresh basil or parsley, for garnish (optional)
Instructions
Cook pasta
Boil pasta in salted water according to package directions. Add asparagus in the last 2–3 minutes of cooking. Drain pasta and asparagus together, reserving about ½ cup of the pasta water.
Make the sauce
In a large skillet over medium heat, add olive oil or butter. Sauté garlic (and red pepper flakes if using) for about 1 minute until fragrant, but not browned.
Add cream
Pour in the cream and bring to a gentle simmer. Let it thicken slightly for 2–3 minutes.
Melt cheese
Stir in Parmesan cheese and mix until melted and creamy. If the sauce is too thick, add a splash of reserved pasta water to loosen it up.
Combine
Add the drained pasta and asparagus to the skillet. Toss to coat in the sauce. Season with salt, black pepper, and a little lemon zest or juice, if using.
Serve
Plate the pasta, sprinkle with extra Parmesan and fresh herbs. Drizzle with a bit of olive oil if desired.
