Ingredients:

2 large eggs

1 ripe avocado

1 tsp lemon or lime juice

Salt & pepper to taste

Optional: chili flakes, everything bagel seasoning, feta, fresh herbs (cilantro, chives, parsley)

Toasted bread (sourdough, rye, etc.) or grain bowl base (like quinoa or brown rice)

How to Make:

1. Make Jammy Eggs:

Bring a small pot of water to a boil.

Lower heat to a gentle boil and carefully add the eggs.

Boil for 6.5 to 7 minutes for jammy yolks.

Transfer to ice water immediately and let sit for a few minutes.

Peel gently.

2. Make Creamy Avocado Mash:

In a bowl, mash the avocado.

Add lemon/lime juice, salt, pepper, and any optional add-ins like chili flakes or minced garli

Mix until smooth and creamy.

3. Assemble:

Toast version: Spread the avocado mash on toasted bread, slice jammy eggs in half and place on top.

Bowl version: Add creamy avocado to a warm grain bowl, slice the jammy eggs and place over the top.

4. Top It Off

Add a drizzle of olive oil, a sprinkle of seasoning (everything bagel seasoning or za’atar works great), and fresh herbs or cheese.

Tips:
