Ingredients:

Pasta:

12 oz (340g) penne or rotini (or any pasta you like)

Chicken:

2 chicken breasts, diced

1 tsp smoked paprika

1 tsp garlic powder

Salt & pepper, to taste

1 tbsp olive oil

Sauce:

1 cup BBQ sauce (smoky/sweet style)

1 cup heavy cream (or half-and-half

½ cup chicken broth (or reserved pasta water)

1 cup shredded cheddar or a cheddar-mozzarella mix

¼ cup cream cheese (optional for extra creaminess)

Add-ins (optional):

½ red onion, thinly sliced

½ cup cooked bacon, crumbled

½ cup corn kernels (fresh, frozen, or canned)

Chopped parsley or green onions (for garnish)

Instructions:

Cook pasta according to package directions. Reserve ½ cup pasta water, then drain and set aside.

Season chicken with smoked paprika, garlic powder, salt, and pepper.

Sear chicken in a large skillet with olive oil over medium-high heat until browned and cooked through. Remove and set aside.

Sauté onions (if using) in the same pan until soft (about 2-3 minutes).

Add BBQ sauce, cream, and broth (or pasta water). Stir and bring to a simmer.

Add cream cheese and shredded cheese. Stir until melted and sauce is smooth.

Return chicken to the pan, along with cooked pasta. Toss everything together until well coated. Add bacon or corn here if using.

Simmer 2-3 minutes until heated through and thickened slightly. Adjust seasoning if needed.

Serve hot, topped with fresh parsley or green onions.

Tips:

Use rotisserie chicken for a faster version.

Want some kick? Add a dash of hot sauce or chipotle powder.

Try a smoked gouda or pepper jack cheese for deeper flavor.
