Ingredients

For the Blackened Chicken

2 large chicken breasts (cut lengthwise into 4 thin cutlets)

1 tbsp paprika

1 tsp garlic powder

1 tsp onion powder

1 tsp dried thyme

1 tsp dried oregano

½ tsp cayenne pepper (adjust to taste)

½ tsp black pepper

1 tsp salt

2 tbsp olive oil or butter (for searing)

For the Creamy Mustard Sauce

1 tbsp butter

3–4 cloves garlic, minced

1 cup heavy cream (or half & half)

1 tbsp Dijon mustard

1 tbsp whole-grain mustard (optional but amazing)

¼ cup chicken broth

2 tbsp parmesan (optional for thickness)

Salt & pepper to taste

1 tbsp lemon juice

Fresh parsley, for garnish

Instructions

1. Season the Chicken

In a small bowl, mix paprika, garlic powder, onion powder, thyme, oregano, cayenne, black pepper, and salt.

Coat the chicken cutlets generously with the spice mixture on both sides.

2. Sear the Chicken

Heat olive oil or butter in a skillet over medium-high heat.

Add the chicken and sear 3–4 minutes per side, until blackened and fully cooked.

Remove to a plate and set aside.

3. Make the Creamy Mustard Sauce

In the same pan, melt 1 tbsp butter.

Add minced garlic and sauté until fragrant (30 seconds).

Pour in chicken broth and scrape up brown bits for flavor.

Stir in heavy cream, Dijon mustard, whole-grain mustard, salt, and pepper.

Bring to a gentle simmer until thickened (2–3 minutes).

Add parmesan if you prefer a thicker, richer sauce.

Stir in lemon juice at the end for freshness.

4. Combine

Place the seared chicken back into the skillet.

Spoon the sauce over the chicken and simmer 2 minutes to absorb flavors.

Garnish with freshly chopped parsley.
