Ingredients
For the Chicken:
2 boneless, skinless chicken breasts (or 4 chicken thighs)
1 teaspoon garlic powder
1 teaspoon dried oregano
½ teaspoon salt
½ teaspoon black pepper
1 tablespoon olive oil
For the Orzo & Sauce:
1 tablespoon olive oil
3 cloves garlic, minced
1 cup orzo pasta
2 cups chicken broth
1 cup heavy cream (or half-and-half for a lighter option)
½ cup whole milk ricotta cheese
½ cup grated Parmesan cheese
1 teaspoon Italian seasoning
½ teaspoon crushed red pepper flakes (optional, for heat)
2 cups fresh spinach (or kale)
1 tablespoon lemon juice (for brightness)
Fresh basil or parsley (for garnish)
Instructions
1. Sear the Chicken:
Season the chicken with garlic powder, oregano, salt, and black pepper.
Heat olive oil in a large skillet over medium-high heat.
Sear the chicken for 4-5 minutes per side until golden brown. Remove and set aside.
2. Cook the Orzo:
In the same skillet, melt butter and saute garlic for 30 seconds until fragrant.
Add orzo and toast for 1-2 minutes until slightly golden.
Pour in chicken broth and bring to a simmer.
Return the chicken to the skillet, cover, and let it cook for 10-12 minutes until orzo is tender and chicken is fully cooked (internal temp 165°F / 75°C).
3. Make It Creamy:
Reduce heat to low. Stir in heavy cream, ricotta, parmesan, Italian seasoning, and red pepper flakes until smooth.
Add fresh spinach and let it wilt for 2-3 minutes.
Squeeze in fresh lemon juice for brightness.
4. Serve & Garnish:
Plate the creamy ricotta orzo and top with sliced chicken.
Garnish with fresh basil or parsley and extra parmesan.
Serve hot and enjoy!
