These Creamy Ricotta & Spinach Stuffed Eggplant Rolls are a comforting Mediterranean-style baked dish. Thin roasted slices of Eggplant are filled with a creamy mixture of Ricotta and Spinach, rolled up, and baked in a flavorful Tomato Sauce with melted Mozzarella on top.

 Ingredients

Eggplant

2 large eggplants

2 tbsp olive oil

½ tsp salt

¼ tsp black pepper

Filling

1 cup ricotta cheese

1 cup fresh spinach (chopped)

¼ cup grated Parmesan Cheese

1 garlic clove, minced

½ tsp dried oregano

¼ tsp chili flakes (optional)

Salt and pepper to taste

Sauce & Topping

1½ cups tomato sauce or marinara

½ cup shredded mozzarella

2 tbsp grated Parmesan

Fresh basil or parsley for garnish

 Instructions 

1. Prepare the Eggplant

Preheat oven to 400°F (200°C).

Slice eggplants lengthwise into thin strips (about ¼ inch thick).

Brush both sides lightly with olive oil and sprinkle with salt and pepper.

Place on a baking sheet and roast 12–15 minutes until soft and flexible.

2. Make the Filling

In a bowl combine:

ricotta

chopped spinach

Parmesan

garlic

oregano

chili flakes

salt and pepper

Mix until creamy and well combined.

3. Roll the Eggplant

Spread about 1–2 tablespoons of filling on each eggplant slice.

Roll from one end to the other to form small rolls.

4. Assemble the Bake

Spread a thin layer of tomato sauce in a baking dish.

Place eggplant rolls seam-side down in the dish.

Pour remaining tomato sauce over the rolls.

Sprinkle mozzarella and Parmesan on top.

5. Bake

Bake for 20 minutes until bubbly and golden.

6. Garnish & Serve

Top with fresh basil or parsley and serve warm.
