Creamy Roasted Beet, Sweet Potato, and Feta Salad
A vibrant salad featuring creamy roasted beets, sweet potatoes, and crumbled feta, tossed with a light vinaigrette for a delicious blend of earthy, sweet, and tangy flavors!
Ingredients:
* 2 medium beets, peeled and cubed
* 2 medium sweet potatoes, peeled and cubed
* 2 tbsp olive oil, divided
* Salt and pepper, to taste
* 4 cups mixed greens or arugula
* 1/2 cup crumbled feta cheese
* 1/4 cup Greek yogurt
* 1 tbsp lemon juice
* 1 tbsp honey
* Fresh herbs (parsley or mint), for garnish
Instructions:
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Toss beet and sweet potato cubes with 1 tbsp olive oil, salt, and pepper.
3. Spread on baking sheet and roast for 25–30 minutes, until tender.
4. In a small bowl, mix Greek yogurt, lemon juice, honey, and a pinch of salt for the dressing.
5. Arrange mixed greens on a platter, then top with roasted beets, sweet potatoes, and crumbled feta.
6. Drizzle with the creamy dressing and garnish with fresh herbs.
