Crispy Air-Fryer Spinach Feta & Herb Egg Rolls

🥬 Ingredients
For the filling
2 cups fresh spinach, chopped
½ cup feta cheese, crumbled
1 small onion, finely diced
2 cloves garlic, minced
1 tbsp olive oil
1 tsp dried oregano
1 tbsp fresh dill or parsley (optional but amazing)
Salt & pepper to taste
For the Wrapping
12 egg roll wrappers (store-bought)
1 beaten egg or a little water (to seal)
For Air-Frying
Olive oil spray or brush
(Optional) sesame seeds for topping
🍽 Instructions
1. Make the Spinach Feta Filling
1. Heat olive oil in a pan.
2. Add onion and cook 3 minutes until soft.
3. Add garlic and cook 30 seconds.
4. Add the chopped spinach and cook until wilted (~2 minutes).
5. Turn off heat and let cool slightly.
6. Mix in feta, oregano, dill/parsley, salt, and pepper.
Taste and adjust seasoning.
2. Assemble the Egg Rolls
1. Lay a wrapper on a board like a diamond shape.
2. Add 2 tbsp filling in the center.
3. Fold bottom corner up over filling.
4. Fold side corners tightly toward the center.
5. Roll upward tightly.
6. Brush the top edge with egg wash or water to seal.
Repeat for all rolls.
3. Air-Fry
1. Preheat air fryer to 375°F (190°C).
2. Lightly spray rolls with olive oil or brush lightly.
3. Place in a single layer (don’t overcrowd).
4. Air-fry 10–12 minutes, flipping halfway, until:
