1 tbsp kimchi juice (optional for extra tang)
1 tbsp soy sauce
1 tbsp rice vinegar or apple cider vinegar
1 tbsp honey or maple syrup
1 tsp sesame oil
1 small garlic clove, minced
1 tsp gochujang (Korean chili paste) or sriracha (adjust for spice level)

A drizzle of Greek yogurt or mayo mixed with lime for creamy contrast
Instructions
1. Preheat Oven / Air Fryer:
Preheat oven to 425°F (220°C) or set air fryer to 400°F (200°C).
2. Prepare the Brussels Sprouts:
Toss halved sprouts with olive oil, salt, and pepper.
Spread evenly on a baking sheet (cut side down for max crisp).
3. Roast or Air Fry:
Oven: Roast for 20–25 minutes, flipping halfway, until deeply golden and crisp.
Air Fryer: Cook for 12–15 minutes, shaking halfway through.
4. Make the Kimchi Sauce:
In a bowl, mix together chopped kimchi, kimchi juice, soy sauce, vinegar, honey, sesame oil, garlic, and gochujang.
Adjust sweetness or heat to taste.
5. Toss and Serve:
Once the Brussels sprouts are crisp, toss them in the kimchi sauce while warm so they absorb the flavor.
Top with sesame seeds and green onions before serving.
