Ingredients

200 g block feta cheese (firm, Greek-style)
½ cup whole-wheat breadcrumbs or panko
1 egg, lightly beaten
2 tbsp flour
½ tsp dried oregano
¼ tsp black pepper
Olive oil spray or 2 tbsp olive oil (for shallow frying or baking)
Roasted Blueberry Maple Sauce
1 cup fresh or frozen blueberries
2 tbsp pure maple syrup
1 tsp olive oil
1 tsp lemon juice
Pinch of salt

Instructions
Prepare the Blueberry Maple Sauce
Preheat oven to 190°C
Toss blueberries with maple syrup, olive oil, lemon juice, salt, and optional spice
Spread on a baking tray
Roast 15–18 minutes until berries burst and sauce thickens
Mash lightly with a fork and set aside
Prepare the Feta
Cut feta into bite-size cubes
Pat dry gently with paper towel
Coat the Feta
Roll feta cubes lightly in flour
Dip into beaten egg
Coat with breadcrumbs mixed with oregano and pepper
Cook the Feta Bites

Heat olive oil in a pan over medium heat
Fry feta bites 1–2 minutes per side until golden
Option B – Bake (Lighter):
Place feta bites on parchment-lined tray
Spray lightly with olive oil
Bake at 200°C for 12–15 minutes, flipping once
