1 tsp garlic powder

1/2 tsp black pepper

1/2 tsp salt

2 eggs, beaten

2 tbsp olive oil (for brushing or pan-frying)

Instructions

Preheat Oven:

Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper or lightly grease it.

Prepare the Coating:

In a shallow bowl, combine chopped pistachios, Parmesan, breadcrumbs, garlic powder, paprika, salt, and pepper.

In another bowl, beat the eggs.

Coat the Chicken:

Dip each chicken piece into the beaten eggs, then press into the pistachio-Parmesan mixture until fully coated.

Place coated chicken on the prepared baking sheet.

Bake or Pan-Fry:

Oven: Lightly brush chicken with olive oil and bake for 20–25 minutes until golden brown and cooked through (internal temperature 75°C / 165°F).

Pan-Fry: Heat 2 tbsp olive oil over medium heat and fry chicken 3–4 minutes per side until golden and crispy. Finish in the oven if needed.
