Cucumber Salad with Roasted Nuts & Herb Sauce

Ingredients
For the Salad
2 large cucumbers, thinly sliced
¼ cup roasted nuts (almonds, walnuts, pistachios, or cashews)
¼ cup red onion, thinly sliced (optional)
1 tbsp sesame seeds (optional)
Salt to taste
For the Herb Sauce
¼ cup fresh parsley
¼ cup fresh mint or cilantro
1 small garlic clove
2 tbsp olive oil
1 tbsp lemon juice
1 tsp honey
1–2 tbsp Greek yogurt (optional for creaminess)
Salt & pepper to taste
Instructions
1. Prepare the Cucumbers
Slice cucumbers into thin rounds or semi-circles.
Lightly sprinkle with salt and set aside for 5 minutes (optional) to remove extra water.
2. Roast the Nuts
Heat a dry pan on medium heat.
Add nuts and toast for 2–3 minutes, stirring, until fragrant and lightly golden.
Roughly chop after cooling.
3. Make the Herb Sauce
Blend or finely chop together:
- Parsley
- Mint
- Garlic
- Olive oil
- Lemon juice
- Honey
- Salt & pepper
Add Greek yogurt if you want a creamy sauce.
Mix until smooth or leave slightly chunky.
4. Assemble the Salad
Add cucumbers to a bowl.
Pour herb sauce over the top.
Add roasted nuts and sesame seeds.
Toss gently.

Add cherry tomatoes for extra color and sweetness.
If serving later, keep nuts separate so they stay crunchy.
Add a bit of chili flakes if you want mild heat.
