Instructions

1. Pre-cook potatoes:

2. Sauté aromatics & greens:

In the same skillet, add 1 tbsp oil. Sauté onion and garlic until fragrant. Add curry powder, turmeric, and cumin; stir 1 min. Toss in chopped greens, cook until wilted.

3. Whisk eggs:

In a bowl, whisk eggs with milk, salt, and pepper. Stir in half the cheese.

4. Assemble frittata:

Return potatoes to skillet, spread evenly. Pour egg mixture over. Gently stir to distribute fillings. Sprinkle remaining cheese on top.

5. Cook & bake:

Cook on stovetop over medium-low for 5 minutes (edges set, center still soft). Transfer skillet to a preheated oven at 375°F (190°C) and bake 12–15 minutes until fully set and golden on top.
