Total time: 40 minutes
Ingredients
6 large eggs
2 medium potatoes, peeled & diced into small cubes
1 ½ cups greens (spinach, kale, or Swiss chard), chopped
1 small onion, finely chopped
1 clove garlic, minced
½ cup cheese (feta, cheddar, or mozzarella – or a mix)
3 tbsp olive oil
2 tbsp milk (optional, for fluffier eggs)
1 tsp curry powder
½ tsp turmeric powder
¼ tsp cumin powder
Salt & black pepper, to taste
Fresh herbs (parsley, cilantro, or chives) for garnish
Instructions
1. Pre-cook potatoes:
Heat 2 tbsp oil in an oven-safe skillet. Add diced potatoes and cook 8–10 minutes, stirring occasionally, until golden and tender. Remove and set aside.
2. Sauté aromatics & greens:
In the same skillet, add 1 tbsp oil. Sauté onion and garlic until fragrant. Add curry powder, turmeric, and cumin; stir 1 min. Toss in chopped greens, cook until wilted.
3. Whisk eggs:
In a bowl, whisk eggs with milk, salt, and pepper. Stir in half the cheese.
4. Assemble frittata:
Return potatoes to skillet, spread evenly. Pour egg mixture over. Gently stir to distribute fillings. Sprinkle remaining cheese on top.
5. Cook & bake:
Cook on stovetop over medium-low for 5 minutes (edges set, center still soft). Transfer skillet to a preheated oven at 375°F (190°C) and bake 12–15 minutes until fully set and golden on top.
6. Serve:
Cool slightly, slice into wedges, garnish with fresh herbs, and serve warm.
Notes & Tips
For extra creaminess, add a dollop of Greek yogurt or ricotta to the eggs before baking.
Potatoes can be pre-roasted for deeper flavor.
Try with sweet potatoes for a twist.
If you don’t have an oven-safe skillet, cook fully on stovetop covered, over low heat.
