Indulge in the sweet and nutty goodness of our Date Balls with Walnuts and Coconut! These no-bake bites combine the natural sweetness of dates, the crunch of walnuts, and the creaminess of coconut, all rolled into perfect little balls.
Ingredients:
  1. 3 1/2 cups (554 g) Medjool dates, pitted and chopped
  2. 3 cups chopped walnuts
  3. 1 1/2 cups sugar
  4. 1 1/2 cups water
  5. 1/4 teaspoon salt
  6. 4 cups crisp rice cereal
  7. 4 1/2 cups coconut flakes
Instructions
Prepare the date mixture:
In a large saucepan, combine the chopped dates, sugar, water, and salt. Cook over medium heat, stirring frequently, until the mixture is smooth and thickened. This takes about 10 minutes. Remove from heat and let it cool slightly.
Combine with dry ingredients:
In a large mixing bowl, combine the walnuts, crisp rice cereal, and the prepared date mixture. Mix until evenly incorporated.
Form into balls:
Scoop small portions of the mixture (about 1 tablespoon) and roll them into balls using your hands.
Coat with coconut:
Place the coconut flakes on a plate. Roll each date ball in the coconut until well coated.
Chill:
Place the finished balls on a parchment-lined tray and refrigerate for at least 1 hour to set.
Serve:
Serve chilled or at room temperature as a sweet treat or snack.

Tips:

1. Use fresh and high-quality ingredients: Fresh dates, crunchy walnuts, and shredded coconut make all the difference in this recipe.
2. Don’t overprocess the mixture: Mix the ingredients just until combined to prevent a dense or tough texture.
3. Add some extra flavor with spices: Try adding a pinch of cinnamon, nutmeg, or cardamom to give the date balls an extra boost of flavor.
4. Make ahead for a quick snack: Prepare the date balls ahead of time and store them in an airtight container for up to 5 days.
5. Experiment with different types of nuts or seeds: Try using almonds, pecans, or pumpkin seeds instead of walnuts for a different flavor and texture.

Health Benefits:

1. Supports Healthy Digestion: The fiber in dates and coconut can help support healthy digestion and prevent constipation.
2. May Help Lower Cholesterol: The monounsaturated fats in walnuts may help lower cholesterol levels and reduce the risk of heart disease.
3. Supports Healthy Bones: The magnesium and copper in dates and walnuts may help support healthy bone density and reduce the risk of osteoporosis.
