Ingredients
4 boneless, skinless chicken breasts
12–16 asparagus spears, trimmed
½ cup shredded mozzarella or provolone
2 tbsp grated Parmesan
1 tbsp olive oil
2 garlic cloves, minced
Zest of ½ lemon
½ tsp dried oregano or thyme
Salt & black pepper, to taste
Optional: 1 tsp Dijon mustard
Instructions
1. Prep chicken
Preheat oven to 375°F (190°C).
Slice a pocket horizontally into each chicken breast (do not cut through).
Season inside and out with salt, pepper, oregano, and lemon zest.
2. Prepare filling
Toss asparagus with olive oil, garlic, and a pinch of salt.
Mix mozzarella and Parmesan together.
3. Stuff
Place 3–4 asparagus spears into each chicken pocket.
Sprinkle cheese mixture inside (and Dijon if using).
Secure with toothpicks if needed.
4. Bake
Place chicken in a lightly greased baking dish.
Bake 25–30 minutes, until chicken reaches 165°F (74°C) and cheese is melted.
5. Finish & serve
Rest 5 minutes before serving.
Optional: broil for 2 minutes for extra golden top.
Serve with lemon wedges.
