🧺 Ingredients

Pasta Salad

2 cups pasta (rotini, bowtie, or penne)

½ cup dill pickles, diced

1 small red bell pepper, diced

1 small cucumber, diced

½ cup cherry tomatoes, halved

¼ cup red onion, finely chopped (optional)

2 tablespoons fresh parsley or dill, chopped

Dressing

3 tablespoons Greek yogurt

2 tablespoons extra-virgin olive oil

1 tablespoon lemon juice

1 teaspoon Dijon mustard

Salt & black pepper, to taste

 Instructions

1️⃣ Cook Pasta

Boil pasta according to package instructions until al dente.

Drain and rinse under cold water to stop cooking.

2️⃣ Prepare Dressing

Whisk together Greek yogurt, olive oil, lemon juice, Dijon mustard, salt, and pepper in a small bowl.

3️⃣ Assemble Salad

In a large bowl, combine pasta, dill pickles, bell pepper, cucumber, cherry tomatoes, red onion, and fresh herbs.

Pour dressing over salad and toss gently to coat evenly.

4️⃣ Chill & Serve

Chill for 20–30 minutes for flavors to meld.
