  1. 3 chicken breasts
  2. 1 medium onion
  3. 1 lime
  4. 3 bell peppers red, yellow, green or orange
  5. 3 tablespoons olive oil divided
  6. 1 teaspoon chili powder
  7. ½ teaspoon smoked paprika
  8. ½ teaspoon onion powder
  9. ½ teaspoon black pepper
½ teaspoon cumin
  11. optional
salt to taste

  1. Cut onion into slivers & slice peppers.
  2. In a separate bowl, combine 1 tablespoon olive oil, juice of ½ lime, chili powder, paprika, onion powder, pepper, cumin and salt. Cut chicken into strips and toss with the spice mixture. Set marinate chicken aside for 2-3 hours.
  3. Preheat 1 tablespoon olive oil over medium high. Add ½ of the chicken and cook until just cooked, about 3-5 minutes. Remove from pan and set aside. Repeat with remaining chicken.
  4. Add 1 tablespoon oil to the pan. Drain onions well and cook 2 minutes. Add in sliced peppers and cook an additional 2 minutes or just until hot. Add chicken back to the pan and stir to combine.
  5. Squeeze additional lime overtop and serve over tortillas.

  1. Marinate the Chicken: Marinating the chicken in a flavorful marinade for at least 30 minutes (or even overnight) before cooking can really enhance its taste and tenderness. You can use a mixture of lime juice, olive oil, garlic, and Mexican spices like cumin, chili powder, and paprika.
  2. Slice the Ingredients Evenly: To ensure even cooking and distribution of flavors, make sure to slice your chicken, bell peppers, and onions into uniform strips or slices.
  3. Preheat the Skillet: Preheat your skillet over medium-high heat before adding the chicken and vegetables. A hot skillet ensures that the chicken gets a nice sear and the vegetables cook quickly without becoming mushy.
  4. Don’t Overcrowd the Pan: Cook the chicken and vegetables in batches if necessary to avoid overcrowding the pan. Overcrowding can lead to steaming rather than searing, resulting in less flavor and texture.
  5. Add Fajita Seasoning: While cooking the chicken and vegetables, sprinkle them with a homemade or store-bought fajita seasoning mix. This adds an extra layer of flavor and authenticity to your fajitas.
  6. Serve with Fresh Toppings: Serve your Easy Chicken Fajitas with an array of fresh toppings such as chopped cilantro, diced tomatoes, shredded cheese, sour cream, guacamole, and lime wedges. These toppings not only add flavor but also provide a variety of textures and colors to your dish.
  7. Warm the Tortillas: Warm your tortillas before serving to make them soft and pliable. You can heat them in a dry skillet for a few seconds on each side or wrap them in foil and warm them in the oven.
  8. Customize to Taste: Feel free to customize your fajitas according to your preferences. You can add additional vegetables like mushrooms or zucchini, or even swap the chicken for steak, shrimp, or tofu for a different twist.
