Easy Grilled Veggie Portable Pizza

Ingredients:

1 naan, pita, or flatbread (store-bought or homemade)

2–3 tablespoons pizza sauce (or pesto/hummus for variation)

½ cup shredded mozzarella (or vegan cheese)

½ cup grilled vegetables (like zucchini, bell pepper, onion, eggplant, mushrooms)

Olive oil (for brushing)

Salt & pepper

Optional toppings: fresh basil, chili flakes, balsamic glaz

Grilling Veggies (quick method):

Slice veggies thinly.

Toss with olive oil, salt, and pepper.

Grill on a stovetop grill pan or outdoor grill for 2–3 mins per side until tender and charred.

Assembly:

Preheat oven or grill to 400°F (200°C).

Brush the flatbread with a little olive oil.

Spread pizza sauce evenly on the base.

Sprinkle cheese over the sauce.

Add grilled veggies on top.

Bake or grill for 8–10 minutes, until cheese melts and edges are crisp.

To Make It Portable:

Let it cool slightly.

Slice and pack in foil or a container.

Bring napkins — it’s delicious even at room temp!
