½ red bell pepper, finely chopped

2 tbsp sliced black or green olives

2 tbsp chopped fresh parsley or dill

1 tsp dried oregano

Salt & black pepper to taste

2 eggs

½ cup Greek yogurt

¼ cup crumbled feta cheese

Pastry

1 sheet puff pastry

6–8 sheets phyllo pastry, brushed lightly with olive oil

Instructions

Step 1: Prepare Filling

Heat olive oil in a pan.

Saute onion until soft (3–4 minutes).

Add bell pepper and zucchini, cook until moisture evaporates.

Turn off heat, stir in tuna, olives, herbs, oregano, salt, and pepper.

Let cool slightly.

Step 2: Prepare Creamy Mix

In a bowl, whisk eggs and Greek yogurt.

Fold in feta cheese if using.

Combine this mixture gently with the tuna filling.

Step 3: Assemble Pie

Preheat oven to 180°C (350°F).

Line a baking dish with pastry:

Puff pastry: one sheet bottom, one on top

Phyllo: layer sheets, brushing lightly with olive oil

Add tuna mixture evenly.

Cover with pastry, seal edges, and lightly score top.

Step 4: Bake

Bake for 35–40 minutes until golden and set.

Rest for 10 minutes before slicing.

Tips

Always squeeze zucchini well to avoid soggy pie.

Phyllo pastry gives a crisp, light Mediterranean texture.

Add capers or sun-dried tomatoes for extra depth.

Serve with a lemony green salad for balance.
