Ingredients
Egg Base
6 large eggs
½ cup milk or cream
Salt & black pepper, to taste
Fillings
½ cup chopped spinach
¼ cup onion, finely diced
¼ cup bell peppers
¼ cup mushrooms
¼ cup cherry tomatoes
Cheese
½ cup shredded cheese (cheddar, mozzarella, or feta)
Optional Extras
Fresh herbs (parsley, basil, oregano)
Cooked chicken, turkey, or tuna
Instructions
1️⃣ Preheat Oven
Preheat to 180°C / 350°F.
Grease a muffin tin or use silicone liners.
2️⃣ Prepare Filling
Lightly saute onions and mushrooms (optional but adds flavor).
Divide veggies and cheese evenly into muffin cups.
3️⃣ Mix Eggs
Whisk eggs, milk, salt, and pepper until smooth.
4️⃣ Assemble
Pour egg mixture over fillings, filling cups about ¾ full.
5️⃣ Bake
Bake 18–22 minutes, until set and lightly golden.
6️⃣ Cool & Serve
Rest 5 minutes before removing. Serve warm or room temperature.
