For the Salad:

½ lb (225g) raw shrimp, peeled and deveined

1 large mango, peeled and diced

1 small cucumber, sliced or diced

½ small red onion, thinly sliced

1 small avocado, diced (optional)

1 cup mixed greens or baby spinach

¼ cup fresh cilantro, chopped

1 tbsp olive oil

Spice Rub for Shrimp:

½ tsp paprika

½ tsp chili powder

¼ tsp garlic powder

¼ tsp cumin

Pinch of salt and pepper

Optional: pinch of red chili flakes or cayenne for more heat

Chili-Lime Dressing:

2 tbsp lime juice (fresh)

1 tsp honey or maple syrup

1 tbsp olive oil

1 tsp Sriracha or chili sauce

½ tsp grated ginger

Instructions

1. Prepare Shrimp

In a bowl, toss shrimp with olive oil and all the spice rub ingredients.

2. Make the Dressing

In a small jar or bowl, whisk together lime juice, honey, olive oil, Sriracha, ginger, and a pinch of salt.

3. Assemble Salad

In a large bowl, combine mango, cucumber, red onion, avocado, greens, and cilantro.

Add warm shrimp on top.

4. Dress and Serve

Drizzle the chili-lime dressing over the salad. Toss gently.

Serve immediately, garnished with extra cilantro or lime wedges.
