Ingredients For Easy Spinach Salad
- One cup sliced small cucumbers
- ten ounces baby spinach
- half cup crumbled goat cheese
- One avocado, sliced
- one cup of sliced red onions
- one cup of dried cranberries
- one cup of raw walnuts
- some freshly cracked pepper for serving
The ingredients for the creamy balsamic dressing are as follows:
- ¼ cup balsamic vinegar
- ¼ cup olive oil
- ¼ cup full-fat Greek yogurt
- ½ teaspoon dijon mustard
- ½ teaspoon honey
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon pepper.
Instructions For Easy Spinach Salad
- Toasted Walnuts:Walnuts should be toasted by adding them to a small skillet and heating it to medium. Allow to simmer for three to five minutes, stirring often, or until fragrant and beginning to brown. Take out of pan and allow to cool.
- To make the dressing: put all the ingredients in a small bowl and whisk until they are well incorporated and creamy. Alternatively, you can use an immersion blender or a blender to combine everything.
- Prepare salad: Toss spinach into a big dish, then add cucumbers, sliced avocado, goat cheese, onions, cranberries, and toasted walnuts. Add freshly cracked pepper on top.
- Toss the salad, drizzle with the dressing, and serve. Another alternative is to dish the salad and serve with dressing on the side so that each person can add their own dressing. Once the salad has been tossed in the dressing, it no longer looks as attractive.
