Festive Citrus–Pomegranate Winter Garden Salad
Ingredients
For the Salad
3 cups mixed winter greens (arugula, baby kale, spinach)
1 orange, peeled and sliced
1 grapefruit, peeled and sliced
1/2 cup pomegranate seeds
1/2 cup thinly sliced fennel
1/4 cup roasted pistachios or walnuts
1/4 cup crumbled feta
1/4 small red onion, thinly sliced
For the Dressing
2 tbsp olive oil
1 tbsp lemon juice
1 tbsp orange juice
1 tsp honey
1 tsp Dijon mustard
Salt & pepper to taste
Optional Garnish
Extra citrus zest
Fresh mint leaves
Directions
Place mixed greens in a large salad bowl.
Arrange orange and grapefruit slices over the greens.
Add pomegranate seeds, fennel, red onion, and nuts.
Sprinkle feta over the salad.
In a small bowl, whisk together olive oil, lemon juice, orange juice, honey, Dijon, salt, and pepper.
Drizzle dressing over the salad just before serving.
Garnish with mint leaves and extra citrus zest.
