Ingredients
For the Salad
2 medium zucchinis, sliced into thick rounds or half-moons
2 ears of corn, husked (or 1½ cups corn kernels)
1 cup cherry tomatoes, halved
½ small red onion, thinly sliced
¼ cup crumbled feta cheese (or diced avocado for dairy-free)
2 tbsp chopped fresh parsley or cilantro
1 tbsp chopped fresh basil (optional)
Olive oil, for grilling
Salt and black pepper, to taste
For the Dressing
2 tbsp olive oil
1 tbsp lemon juice (or lime juice for tangier flavor)
1 tsp Dijon mustard
1 tsp honey (optional, to balance acidity)
1 small garlic clove, minced
Salt and pepper, to taste
Instructions
1. Grill the Vegetables
1. Brush zucchini slices and corn lightly with olive oil.
2. Heat a grill pan or outdoor grill over medium-high heat.
3. Grill zucchini for 2–3 minutes per side, until char marks appear and tender.
4. Grill the corn for 8–10 minutes, turning occasionally until lightly charred.
5. Let the corn cool slightly, then slice kernels off the cob.
2. Make the Dressing
1. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, garlic, salt, and pepper.
2. Taste and adjust seasoning as needed — it should be bright and tangy.
3. Assemble the Salad
1. In a large mixing bowl, combine grilled zucchini, grilled corn kernels, cherry tomatoes, and red onion.
2. Pour the dressing over the salad and toss gently to coat.
3. Add feta (or avocado) and fresh herbs. Toss lightly once more.
4. Serve
Serve warm, at room temperature, or chilled.
Garnish with extra herbs or a sprinkle of chili flakes if desired.
Notes & Tips
Add protein like grilled chicken, shrimp, or chickpeas to make it a full meal.
For extra crunch, mix in toasted almonds, sunflower seeds, or crispy pita chips.
You can use frozen corn — just thaw and sauté briefly before mixing.
A little zest of lemon on top enhances freshness.
