Fresh Grilled Chicken Caprese with Balsamic Glaze
This Fresh Grilled Chicken Caprese features tender grilled chicken, cherry tomatoes, mozzarella, and basil, drizzled with balsamic glaze and served on a bed of greens for a light, flavorful meal!
Ingredients:* 2 boneless, skinless chicken breasts
* 2 tbsp olive oil
* 2 tbsp balsamic glaze
* 2 cups cherry tomatoes, halved
* 8 oz fresh mozzarella balls (bocconcini)
* 1/4 cup fresh basil leaves, torn
* 4 cups fresh arugula or mixed greens
* Salt and pepper to taste
Directions:
1. Heat the grill to medium-high.
2. Coat the chicken breasts with olive oil and season with salt and pepper.
3. Grill the chicken for 6-7 minutes per side until it reaches an internal temperature of 165°F.
4. Remove from the grill and let it rest briefly.
5. In a large bowl, combine cherry tomatoes, mozzarella, and fresh basil.
6. Slice the grilled chicken into strips and add it to the bowl with the other ingredients.
7. Drizzle balsamic glaze over the mixture and gently toss to combine.
8. Serve the dish on a bed of fresh arugula or mixed greens for a complete meal.
