Ingredients 

For the Chicken

2 chicken breasts (or thighs)

1 tbsp olive oil

1 tsp garlic powder

1 tsp dried oregano

½ tsp dried basil

½ tsp paprika

Salt & black pepper

1 tbsp lemon juice

Optional: 2 minced garlic cloves

For the Crispy Potatoes

2–3 medium potatoes, cubed

1 tbsp olive oil

½ tsp paprika

½ tsp dried rosemary or oregano

Salt & pepper

For the Green Beans

1½ cups green beans, trimmed

1 tsp olive oil

2 garlic cloves, minced

Salt & pepper

Optional: squeeze of lemon

Instructions

1. Roast the Crispy Potatoes

Preheat oven to 220°C (425°F).

Toss potatoes with olive oil, paprika, rosemary, salt, and pepper.

Spread on a baking tray and roast for 20–25 minutes, until golden and crispy.

2. Prepare & Cook the Chicken

Season chicken with garlic powder, oregano, basil, paprika, salt, pepper, and lemon juice.

Heat a pan with olive oil on medium-high heat.

Add chicken and cook 5–6 minutes per side until golden and cooked through.

Add minced garlic in the last minute and toss so the chicken absorbs the aromatics.

Remove and let rest.

3. Saute the Green Beans

In the same pan, add a splash of olive oil if needed.

Add green beans and sauté for 4–5 minutes.

Add minced garlic, salt, pepper, and cook another 1 minute.

Optional: finish with a squeeze of lemon.

4. Assemble the Plate

Add a serving of crispy roasted potatoes.

Add garlic herb chicken sliced or whole.
