2 cans (15 oz each) chickpeas, drained & rinsed

2 tbsp olive oil

3 cloves garlic, finely minced (or 1 tsp garlic powder if preferred)

1 tsp smoked paprika

1/2 tsp ground cumin

1/2 tsp dried oregano

Salt & black pepper, to taste

For the Spiced Yogurt:

1 cup Greek yogurt (plain, whole milk recommended)

1 tbsp lemon juice

1 tbsp olive oil

1/2 tsp ground coriander

1/4 tsp ground cumin

1/4 tsp cayenne or chili flakes

Salt, to taste

For Garnish:

Fresh parsley or mint, chopped

Drizzle of olive oil

Pinch of paprika or sumac

Instructions

Preheat Oven → 400°F (200°C). Line a baking sheet with parchment paper.

Prepare Chickpeas → Pat chickpeas very dry with a towel (this makes them crispier).

Season & Roast → Toss chickpeas with olive oil, garlic, paprika, cumin, oregano, salt, and pepper. Spread evenly on the baking sheet. Roast for 25–30 minutes, shaking the pan halfway, until golden and crunchy.

Make the Spiced Yogurt → In a bowl, whisk yogurt with lemon juice, olive oil, coriander, cumin, cayenne, and salt. Adjust seasoning to taste.

Assemble & Serve → Spread yogurt on a plate or shallow bowl, pile roasted chickpeas on top, and finish with herbs, olive oil, and paprika or sumac.
