Greek Pizza with Pourable Crust

It is possible to prepare and bake a handmade pizza dough in less than half an hour! The secret is to quickly prepare a pourable crust. I chose ingredients for my pizza with a Greek theme in mind, including feta, artichokes, roasted eggplant and bell peppers, mint, and lemon.

Ingredients For Greek Pizza with Pourable Crust

1 sliced Japanese eggplant (quarter-inch circles)
freshly ground black pepper and kosher salt
One bell pepper cut into quarter-inch rounds
Two tsp canola oil
Nonstick cooking spray
Two tsp of cornmeal
Whole-wheat flour, 3/4 cup
1/4 cup of flour for all purposes
One-tsp dry oregano, crumbled between the fingers
one and a half cups low-fat milk
two big, beaten eggs
Eight artichokes, drained, washed, and cut in half from a 14-ounce can
1/4 cup of red onion, thinly sliced
Half a cup of cherry tomatoes
1/2 cup (2 ounces) of crumbled feta
Optional: fresh mint leaves and lemon wedges

Directions For Greek Pizza with Pourable Crust
Preheat the oven to 400°F. Use parchment on two big rimmed baking sheets.
Place eggplant slices in a colander in the sink and sprinkle with 1/8 teaspoon salt. Flip slices and sprinkle again. (This process helps reduce the bitterness.) Set aside.
Toss bell peppers with 1 teaspoon oil in a large bowl. Spread on a broad-rimmed baking sheet.
Remove the salt off the eggplant and dry with a paper towel. Toss eggplant with remaining teaspoon oil in a bowl. Spread the peppers and eggplant on the other prepared baking sheet and bake 20 minutes, turning halfway. Leave the oven on.
Meanwhile, spray a 15-by-10-inch (or 13-by-9-inch) rimmed baking sheet with cooking spray and sprinkle cornmeal on it.
In a large basin, mix both flours, oregano, 1/4 teaspoon salt, and a few grinds of pepper. A small bowl of milk and eggs should be mixed into the flour mixture until fully incorporated. Evenly distribute the dough on the baking pan. Add roasted eggplant and bell peppers.
Bake pizza for 10 minutes. Put the pizza under broil and add artichokes, red onion, cherry tomatoes, and cheese. For 5 minutes, broil the cheese until melted and brown. Watch carefully.
Add mint leaves on the pizza and serve with lemon wedges
