1 kg (2.2 lbs) Yukon Gold or Russet potatoes, peeled and cut into wedges

4 tbsp olive oil

4 garlic cloves, minced

Juice of 2 lemons (about ⅓ cup)

1 cup chicken or vegetable broth

1 tsp dried oregano

½ tsp paprika

Salt & black pepper, to taste

½ cup crumbled feta cheese

Fresh parsley or dill, chopped

Instructions

Step 1: Prep the Potatoes

Preheat oven to 200°C (400°F).

Peel and cut potatoes into wedges.

Step 2: Season & Roast

In a large baking dish, whisk together olive oil, lemon juice, broth, garlic, oregano, paprika, salt, and pepper.

Toss potato wedges in the mixture until fully coated.

Spread evenly in a single layer.

Roast uncovered for 25 minutes, then flip potatoes.

Roast another 20–25 minutes, until golden and crisp at the edges.

Step 3: Add Feta & Herbs

Remove from oven and sprinkle with crumbled feta.

Garnish with fresh parsley or dill.

Serve hot with extra lemon wedges on the side.
