Ingredients
For the Chicken Marinade:
4 boneless chicken thighs (or breasts, but thighs stay juicier)
3 tbsp olive oil
3 garlic cloves
Juice of 1 lemon
1 tsp dried oregano
½ tsp paprika
½ tsp cumin
Salt & black pepper to taste
For the Tzatziki:
1 cup Greek yogurt
½ cucumber
2 garlic cloves
1 tbsp olive oil
1 tbsp lemon juice
1 tbsp fresh dill (or mint), chopped

For the Fries:
1 lb (450 g) potatoes (Russet or baby potatoes), cut into fries
3 tbsp olive oil
1 tsp garlic powder
1 tsp dried oregano

For the Plate Extras:
1 cup cherry tomatoes, halved
½ red onion, thinly sliced
1 small cucumber, sliced
½ cup feta cheese, crumbled
Lemon wedges & fresh parsley for garnish
Instructions
Marinate the chicken:
In a bowl, whisk olive oil, garlic, lemon juice, oregano, paprika, cumin, salt, and pepper.
Coat chicken, cover, and marinate at least 1 hour (up to overnight).
Make the tzatziki:
Mix yogurt, grated cucumber, garlic, olive oil, lemon juice, dill, salt, and pepper.
Chill in the fridge until serving.
Cook the fries:
Preheat oven to 220°C (425°F).
Toss fries with olive oil, garlic powder, oregano, salt, and pepper.
Spread on baking sheet, roast 30–35 minutes, flipping halfway, until golden and crispy.
Cook the chicken:
Grill, pan-sear, or bake chicken at 200°C (400°F) for 20–25 minutes, until cooked through (internal temp 75°C / 165°F).
Let rest 5 minutes, then slice.
Assemble the plate:
Add chicken slices, a portion of fries, a scoop of tzatziki, and some fresh Greek salad (tomatoes, cucumber, onion, feta).
Garnish with lemon wedges and parsley.
