Ingredients
Filling:
1 tbsp olive oil
2 cloves garlic, minced

2 tbsp cream cheese or ricotta (optional for creamier filling)
1 egg, lightly beaten (reserve 1 tbsp for egg wash)
1 tbsp fresh dill or parsley, chopped (or 1/2 tsp dried)
Salt and pepper to taste
Pinch of nutmeg (optional, classic Greek flavor boost)
Pastry:
1 sheet puff pastry, thawed if frozen
1 tbsp sesame seeds or nigella seeds (optional topping)
Instructions
1. Preheat Oven:
Preheat to 400°F (200°C). Line a baking sheet with parchment paper.
2. Make the Filling:
Heat olive oil in a skillet. Add garlic and cook for 30 seconds.
Add spinach and cook until wilted. Let cool slightly.
In a bowl, mix spinach with feta, cream cheese (if using), egg (reserving a little for brushing), herbs, salt, pepper, and nutmeg.
3. Assemble the Pinwheels:
Roll out puff pastry on a lightly floured surface.
Spread spinach-feta mixture evenly over the pastry, leaving 1/2 inch border.
Roll tightly into a log from the longer side.
Slice into 1-inch thick rounds.
4. Bake
Place pinwheels flat on the baking sheet.
Brush tops with remaining beaten egg.
Sprinkle with sesame or nigella seeds (optional).
Bake for 20–25 minutes, until golden and puffed.
5. Serve
Serve warm or at room temperature. Delicious with tzatziki or a squeeze of lemon!
