Ingredients 

For the fritters

1 cup chickpeas (cooked, drained, lightly mashed)

1 cup ripe tomatoes, finely chopped (seeds removed)

2 tbsp fresh parsley, chopped

1 tbsp fresh dill or mint, chopped

1 garlic clove, grated (optional but traditional)

¼ cup feta cheese, crumbled (optional but recommended)

½ cup all-purpose flour (or chickpea flour)

½ tsp dried oregano

Salt to taste

Black pepper to taste

Olive oil for shallow frying

Optional addition

1 tbsp lemon zest (very Greek & fresh)

1 tbsp grated zucchini (squeeze moisture well)

Instructions

1. Prepare tomatoes

Place chopped tomatoes in a sieve, sprinkle lightly with salt, and let drain for 5 minutes. This prevents soggy fritters.

2. Mix the batter

In a bowl, combine chickpeas, tomatoes, onion, herbs, garlic, feta, oregano, salt, and pepper.

3. Add flour

Mix in flour gradually until you get a thick, spoonable batter. Rest for 10 minutes.

4. Fry

Heat olive oil in a shallow pan over medium heat.

Drop heaped tablespoons of batter and gently flatten.

5. Cook until golden

Fry 3–4 minutes per side until crispy and golden brown.

6. Drain & serve

Transfer to paper towel and serve warm.
