Grilled Corn Rings with Garlic & Herbs

Sweet corn cut into thick rings, grilled until lightly charred, then tossed with olive oil, garlic, and fresh herbs.
These corn rings are playful, delicious, and perfect as a healthy party snack or festive side dish.

Ingredients

3 large corn cobs, husked

2 tbsp olive oil

2 garlic cloves, finely minced

½ tsp smoked paprika or black pepper

Salt, to taste

1 tbsp fresh parsley, chopped

1 tbsp fresh cilantro or basil, chopped

Optional: lemon wedges or grated Parmesan

Instructions

1. Prepare corn

Cut each corn cob crosswise into thick rings (about 1½ inches).

2. Grill

Preheat grill pan or outdoor grill to medium-high.

Brush corn rings with olive oil.

Grill 4–5 minutes per side until golden with light char marks.

3. Toss with garlic & herbs

In a bowl, combine warm corn rings with garlic, paprika, salt, and fresh herbs.

Toss gently to coat.

4. Serve

Finish with a squeeze of lemon or a sprinkle of Parmesan if desired.

Serve warm.

Tips & Variations

Add chili flakes for gentle heat.

Serve with garlic yogurt or lemon tahini dip.

Use air fryer (390°F / 200°C for 10–12 minutes) if no grill.

Great alongside grilled fish or chicken.
