2 blocks (8 oz each) halloumi cheese, cut into 1/2-inch slices

1 tbsp olive oil

For the Tomato & Olive Salsa:

2 cups cherry tomatoes, diced (or regular tomatoes, chopped)

1/2 cup Kalamata olives, pitted & chopped

1 small red onion or shallot, finely chopped

2 tbsp fresh parsley, chopped (or basil)

1 tbsp capers

2 tbsp extra-virgin olive oil

1 tbsp red wine vinegar (or lemon juice)

Salt & black pepper, to taste

Instructions
