Grilled Mediterranean Veggie Quesadillas
Char-grilled Mediterranean vegetables layered with feta–mozzarella melt, herbs, and lemony flavor, folded into crispy tortillas. Smoky, cheesy, fresh — this is Mediterranean–Mexican fusion done right.

Ingredients
Grilled Veggies
1 zucchini, sliced
1 red bell pepper, sliced
1 small red onion, sliced
1 cup mushrooms, sliced
2 tbsp olive oil
½ tsp dried oregano
½ tsp smoked paprika
Salt & black pepper
Cheese & Filling
½ cup shredded mozzarella
¼ cup crumbled feta
1 tbsp chopped fresh parsley or basil
Zest of ½ lemon
Quesadillas
4 large flour tortillas
Olive oil or butter for brushing
Optional Add-Ins
Sun-dried tomatoes, chopped
Kalamata olives, sliced
Baby spinach or arugula
Instructions
Grill the Veggies
Toss veggies with olive oil, oregano, smoked paprika, salt & pepper.
Grill on a hot pan or outdoor grill 2–3 min per side until charred and tender.
Remove and roughly chop.
Build the Filling
Mix grilled veggies with mozzarella, feta, herbs, and lemon zest.
Grill the Quesadillas
Brush tortillas lightly with oil or butter.
Spread filling over half of each tortilla.
Fold and grill on medium heat 2–3 min per side until golden and cheese melts.
Serve
Slice into wedges.
Serve hot with dipping sauce.
