Ingredients

For the Scallops

450 g (1 lb) large sea scallops

1 tbsp olive oil

1 tsp lime juice

½ tsp salt

¼ tsp black pepper

½ tsp garlic powder

For the Zesty Lime Cilantro Sauce

¼ cup fresh cilantro leaves

2 tbsp lime juice

2 tbsp olive oil

1 small garlic clove

1 tsp honey

Salt and pepper, to taste

1–2 tbsp water, for blending

Optional Garnishes

Extra lime wedges

Chopped cilantro

Sprinkle of red chili flakes

Instructions

1. Prepare the Sauce

In a small blender or food processor, combine cilantro, lime juice, olive oil, garlic, honey, salt, and pepper.

Blend until smooth, adding a splash of water for a drizzleable consistency.

Taste and adjust lime or salt as needed. Set aside.

2. Prep the Scallops

Pat scallops completely dry with paper towels (for the perfect sear).

Toss with olive oil, lime juice, salt, and pepper.

Let rest for 5–10 minutes while preheating the grill or grill pan.

3. Grill the Scallops

Heat grill or grill pan over medium-high heat.

Lightly oil the surface to prevent sticking.

Grill scallops 2–3 minutes per side — they should be golden and opaque in the center (do not overcook).

Remove and let rest briefly.

4. Serve

Arrange scallops on a platter or over a bed of greens or couscous.

Spoon the zesty lime cilantro sauce over the top or serve on the side.

Garnish with lime wedges and extra cilantro.

Notes & Tips

Always dry scallops well before grilling — moisture prevents caramelization.

You can substitute shrimp or fish fillets for scallops.
