Ingredients

Salad

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

½ cup cucumber, diced

½ cup cherry tomatoes, halved

2 tbsp Kalamata olives, sliced

2 tbsp feta cheese, crumbled

Dressing

2 tbsp extra-virgin olive oil

1½ tbsp fresh lemon juice

Salt & black pepper, to taste

Instructions

Add cucumber, cherry tomatoes, red onion, and olives.

2️⃣ Make the dressing

In a small bowl, whisk olive oil, lemon juice, oregano, salt, and black pepper.

3️⃣ Toss the salad

Pour dressing over the salad and toss well until evenly coated.

4️⃣ Finish & serve

Sprinkle feta cheese on top (if using).
