Ingredients
For the Toast:
4 slices whole-grain or sourdough bread, toasted
1 large ripe avocado
1 tbsp lemon juice (freshly squeezed)
½ tsp lemon zest
1 tbsp extra-virgin olive oil
4 oz (115 g) halloumi cheese, sliced into ¼-inch slices
¼ tsp black pepper
¼ tsp chili flakes (optional, for mild heat)
Pinch of salt (optional — halloumi is already salty)
Garnish:
Fresh parsley, mint, or basil leaves
Extra lemon wedges for squeezing
Instructions
1. Prepare the Avocado Smash
Scoop avocado into a bowl.
Add lemon juice, lemon zest, olive oil, black pepper, and (optional) a small pinch of salt.
Mash until creamy but slightly chunky.
2. Cook the Halloumi
Heat a non-stick skillet over medium heat (no oil needed — halloumi releases moisture as it cooks).
Sear halloumi slices for 1–2 minutes per side until golden brown.
3. Assemble the Toasts
Spread smashed avocado evenly over the toasted bread slices.
Top with seared halloumi.
Sprinkle chili flakes for zest and garnish with fresh herbs.
4. Serve Immediately
Serve with extra lemon wedges for a fresh squeeze before eating.
Notes & Tips
For extra Mediterranean flair, add thin cucumber slices under the halloumi.
If you like a tangy twist, drizzle balsamic glaze over the top.
Swap lemon for lime for a slightly sharper flavor.
