For the Crust:
1 refrigerated pie crust (or homemade)
1 egg, beaten (for egg wash)
Instructions
1. Preheat & Prepare:
Preheat your oven to 375°F (190°C).
Grease a 9-inch pie dish or small ramekins for individual servings.
2. Cook the Vegetables:
In a large skillet, put olive oil over medium heat.
Add onions, bell pepper, and celery; saute until soft (about 5 minutes).
Stir in garlic and cook for 30 seconds until fragrant.
3. Make the Roux:
Sprinkle flour over the vegetables, stirring constantly for 1 minute to form a roux.
Slowly whisk in seafood stock and heavy cream, stirring until thickened (3-4 minutes).
4. Add Crawfish & Seasoning:
Stir in crawfish tails, Cajun seasoning, paprika, black pepper, salt, Worcestershire sauce, and hot sauce.
Add peas (or corn), lemon juice, and parsley.
Simmer for 5 minutes, then remove from heat.
5. Assemble the Pot Pie:
Pour the crawfish mixture into the prepared pie dish.
Roll out the pie crust and place it over the filling, crimping the edges.
