Honey Cranberry Chicken Bake with Feta Cheese
Ingredients
Chicken
700 g chicken breasts or thighs (halal), boneless and skinless
2 tbsp olive oil
Salt and freshly cracked black pepper, to tast
1 tsp smoked paprika
1 tsp garlic powder
Honey Cranberry Sauce
⅓ cup honey
½ cup dried cranberries
2 tbsp fresh orange juice or water
1 tbsp Dijon mustard
1 clove garlic, minced
½ tsp dried thyme or rosemary
Topping
120 g feta cheese, crumbled
2 tbsp chopped walnuts or pecans (optional)
Fresh parsley or thyme, for garnish
Directions
Preheat oven to 190°C (375°F). Lightly grease a baking dish.
Season chicken on both sides with salt, pepper, smoked paprika, and garlic powder. Arrange in the baking dish.
In a small bowl, whisk honey, dried cranberries, orange juice, Dijon mustard, minced garlic, and dried herbs.
Pour honey cranberry sauce evenly over the chicken.
Cover loosely with foil and bake for 25 minutes.
Remove foil, sprinkle feta cheese and nuts over the chicken, and return to oven uncovered.
Bake an additional 10–15 minutes until chicken is cooked through and sauce is bubbling and slightly caramelized.
Garnish with fresh herbs and serve warm with rice, couscous, or roasted vegetables.
