Ingredients:

  1.  6-8 bone-in, skin-on chicken thighs (you can use boneless if you prefer)

  1.  1/4 cup honey
  2. 3 tbsp soy sauce (or tamari for gluten-free)
  3.  4 cloves garlic, minced
  4.  1 tbsp apple cider vinegar (or rice vinegar)
  5. 1 tbsp Dijon mustard (optional, for a little tang)
  6. 1/2 tsp red pepper flakes (optional, for a touch of heat)
  7.  1 tsp cornstarch (optional, for thickening the glaze)

Instructions:

1. Prep the Chicken Thighs:

  1.  Preheat your oven to 400°F (200°C).Pat the chicken thighs dry with paper towels to ensure crispy skin.
  2.  Season the chicken thighs generously with salt and pepper.

2. Sear the Chicken:

  1. Heat 2 tablespoons of olive oil in an oven-safe skillet (like a cast-iron skillet) over medium-high heat.
  2. Once the pan is hot, add the chicken thighs, skin-side down. Cook for 5-7 minutes, until the skin is golden and crispy.
