Hot Honey Beet Carpaccio with Feta Snowflakes

Ingredients

3 medium cooked beets, thinly sliced

2 tbsp hot honey

1 tbsp olive oil

1 tbsp lemon juice

Salt & black pepper to taste

1/3 cup feta cheese, finely crumbled (to resemble “snowflakes”)

 

1 tbsp chopped pistachios (optional)

 

Fresh dill or mint for garnish

 

Directions

 

Thinly slice the cooked beets using a mandoline or sharp knife.

 

Arrange the slices in a circular pattern on a plate to create a carpaccio base.

 

In a small bowl, whisk hot honey, olive oil, lemon juice, salt, and pepper.

 

Drizzle the dressing evenly over all the beet slices.

 

Sprinkle the crumbled feta over the top to mimic soft “snowflakes.”

 

Garnish with pistachios and herbs before serving.
