Jamaican Cabbage

INGREDIENTS:
  1. 1 small head green cabbage
  2. 3 teaspoons olive oil
  3. ½ sweet onion, diced
  4. 3 cloves garlic, minced
  5. 1 red bell pepper, diced
  6. 1 cup shredded carrot
  7. 1 jalapeno or habanero, finely diced
  8. 3 green onions, chopped
  9. 2-3 sprigs fresh thyme
  10. 1 ½ teaspoon salt
  11. ½ teaspoon black pepper
  12. 1 teaspoon onion powder
  13. 1 teaspoon paprika
  14. ¼ cup water
  15. 2 tablespoons white vinegar
  16. 1 tablespoon granulated sugar or honey

Method:

  1. Place the cabbage in a sieve once it has been chopped into thin strips. Refresh with ice-cold water.
  2. Add the oil to a Dutch oven or a pot that has a cover and place it over medium heat. When the onion has been cooked for two to three minutes, add the garlic. A minute should be spent cooking with constant stirring.
  3. Peppers, carrots, and green onions should be added. After stirring to blend, continue cooking for an additional three to four minutes.
  4. In addition to the water, add the cabbage, dry spice, and thyme. Wait until the very end to add the sugar and vinegar.
  5. Lower the temperature to a medium-low setting and cover the pot. Set the cabbage aside for about ten minutes to steam.
  6. Cook the cabbage for one to two minutes after adding the vinegar and sugar (honey) mixture once it has become soft.
  7. Get rid of the thyme, and serve it hot.
