Jamaican Cabbage
- 1 small head green cabbage
- 3 teaspoons olive oil
- ½ sweet onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup shredded carrot
- 1 jalapeno or habanero, finely diced
- 3 green onions, chopped
- 2-3 sprigs fresh thyme
- 1 ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ¼ cup water
- 2 tablespoons white vinegar
- 1 tablespoon granulated sugar or honey
Method:
- Place the cabbage in a sieve once it has been chopped into thin strips. Refresh with ice-cold water.
- Add the oil to a Dutch oven or a pot that has a cover and place it over medium heat. When the onion has been cooked for two to three minutes, add the garlic. A minute should be spent cooking with constant stirring.
- Peppers, carrots, and green onions should be added. After stirring to blend, continue cooking for an additional three to four minutes.
- In addition to the water, add the cabbage, dry spice, and thyme. Wait until the very end to add the sugar and vinegar.
- Lower the temperature to a medium-low setting and cover the pot. Set the cabbage aside for about ten minutes to steam.
- Cook the cabbage for one to two minutes after adding the vinegar and sugar (honey) mixture once it has become soft.
- Get rid of the thyme, and serve it hot.
