Lasagna Roll-Ups Recipe

Lasagna roll-ups are a fun and easy twist on traditional lasagna. Instead of layering, each lasagna noodle is filled with a delicious ricotta mixture, rolled up, and baked in a rich marinara sauce. This dish is perfect for meal prep, family dinners, or special occasions, offering all the classic flavors of lasagna in a more manageable portion.

Ingredients

For the Roll-Ups:

12 lasagna noodles, cooked and drained

2 cups ricotta cheese

1 ½ cups shredded mozzarella cheese (divided)

½ cup grated Parmesan cheese

1 egg

2 cloves garlic, minced

1 tsp dried Italian seasoning

½ tsp salt

½ tsp black pepper

2 tbsp chopped fresh parsley (plus extra for garnish)

For the Sauce:

2 cups marinara sauce (store-bought or homemade)

½ tsp red pepper flakes (optional, for heat)

1 tsp olive oil

1 small onion, finely chopped

1 clove garlic, minced

½ lb ground beef or Italian sausage (optional, for a meaty version)

Instructions

1. Cook the Lasagna Noodles

Bring a large pot of salted water to a boil.

Cook lasagna noodles according to package instructions until al dente.

Drain and lay them flat on a baking sheet lined with parchment paper to prevent sticking.

2. Prepare the Filling

In a mixing bowl, combine ricotta cheese, 1 cup mozzarella, Parmesan, egg, garlic, Italian seasoning, salt, black pepper, and parsley.

Mix until well combined and set aside.

3. Make the Sauce

Heat olive oil in a pan over medium heat.

Add onions and saute until soft (about 2 minutes).

If using meat, add ground beef or sausage and cook until browned.

Stir in minced garlic, red pepper flakes, and marinara sauce. Let simmer for 5 minutes.

4. Assemble the Roll-Ups

Preheat oven to 375°F (190°C).

Spread ½ cup of marinara sauce evenly over the bottom of a baking dish.

Lay out a cooked lasagna noodle, spread 2-3 tablespoons of the ricotta mixture over it, and roll it up tightly.

Place seam-side down in the baking dish. Repeat with remaining noodles.

5. Bake the Roll-Ups

Pour the remaining marinara sauce over the roll-ups.

Sprinkle with the remaining ½ cup mozzarella cheese.

Cover with foil and bake for 20 minutes.

Remove foil and bake for another 10 minutes until cheese is bubbly and golden.

6. Serve & Enjoy

Let the lasagna roll-ups cool for 5 minutes before serving.

Garnish with extra parsley and Parmesan cheese.
